THE STIGMA OF THE CROCUS FLOWER
Saffron is the stigma of the crocus flower which originally came from Asia Minor, where it has been cultivated since ancient times. The Moors brought with them the spice az-zafaran during their invasion of Spain over a thousand years ago. Today, over 70% of the saffron world's production is grown on the high Castilian plateau known as La Mancha.
THE HARVEST AND DRYING OF SAFFRON
Each bulb produces 2-3 flowers. The plants bloom in October and November in the depth of the night and must be harvested within the day, before dusk, otherwise they lose their flavor. The harvest lasts only about 10 days and is still done entirely by hand. The flowers are collected by the farmers and then passed along to the women of the area, who sit at long tables to separate the red stigmas from the rest of the flower. Next, the stigmas are roasted to dry them.
WHY IS SAFFRON SO EXPENSIVE?
Saffron is one of the most valuable spices in the world. These iconic bright red-gold threads are the stigma of the crocus flowers and are only harvested and prepared by hand. Each flower only grows three saffron threads. It takes about 200 crocus flowers to make 1 gram of saffron and about 80,000 flowers to produce one pound of threads, which is why saffron is so expensive and it is essential to know how to use it and cook with it.
HOW TO USE SAFFRON
Saffron can be grinded to a powder or brewed in hot (not boiling) water. When powdered, saffron can be added directly to a dish while saffron threads need to be steeped or brewed into hot water and left in infusion to withdraw the incomparable flavor and golden color.
HOW MUCH SAFFRON TO USE
Saffron is best used in small doses, to obtain a subtly sweet and delicate flavor with floral and honey notes. Too much can overpower a dish with a bitter flavor. A good rule of thumb is to use about 2-3 threads per serving when making a dish.
WHAT TO COOK WITH SAFFRON
Saffron is used in a variety of well-known dishes from cuisines around the world, especially Persian, Indian, Italian and Spanish. It is mainly used in the preparation of rice and paella, paired with chicken or seafood, but its sweet notes make it also ideal to use in the preparation of desserts.

The recipe called for one teaspoon of saffron for two cups of rice, which sounded like a lot because this is slightly compacted but I picked out a few threads at a time, loosely filled a one teaspoon measure and soaked in warm water for a few minutes before preparation (supposedly this should be done for longer). I definitely tasted it in the rice, yum! The smell, the color, beautiful. Maybe a tiny bit more next time but still great and didn't make a huge dent in the two grams which seems like not much but actually it is.
I really love tins and I was afraid from a few reviews that I would not get it but I did. I hope that was a temporary issue and I am not just lucky, I want everyone to get their saffron in cute tins! Which by the way are slightly larger than Altoids Smalls tins, but not hinged.
