Shun“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection. Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see. |
Handcrafted in JapanShun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world. |
Knife Steel is EssentialHeat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process. |
Quality and PerformanceShun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time. Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too. |

Shun Classic
Shun Classics are the original Shuns, the first Japanese-style knives to be made available to a wider audience in North America. Instead of heavy ponderous blades, Shun Classic blades are lighter with razor-sharp edges and crafted from advanced steel. Rather than weighty, Western handles, Shun Classic offers the graceful control of a traditional Japanese handle.
With Shun Classic, you'll discover a wide selection of traditional blade shapes as well as unique shapes - so you can always find the right handcrafted knife for every kitchen task.
Pakkawood Handle
These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.
Shun is Different
If you've never owned a Japanese knife before, you'll immediately notice how different a Shun feels in the hand. Shun is harder, lighter, and sharper. Sharpened to a steeper angle (16 degrees) with an edge that will hold longer, the Classic line is designed to cut in a smooth, slicing motion.
Layered Steel
Shun proprietary VG-MAX cutting core is a high-end "super steel" that is extremely hard, enabling Shun Classic knives to take an incredible edge and hold it longer.
Stainless Damascus Cladding is made of 34 layers of stainless steel on each side of the blade, for a total of 69 layers. Classic's cladding supports the cutting core, adds stain and corrosion resistance, and looks elegant.
Shun and Sharpening
Shun are backed by Shun against manufacturing defects. In addition to supporting our products, we will be happy to sharpen your Shun or Kai knife for free for as long as you own the knife.

Product Description
Add THE must-have all-around food prep knife to your collection with the Shun Cutlery 8-inch Classic Western Cook's Knife. This western-style chef's knife offers a 22-degree cutting angle instead of the 16 degrees of the rest of Shun's classic line. This less-acute edge provides additional strength – making it perfect for tackling heavier foods like winter squash and large heads of cabbage. The Classic Western Cook's Knife is constructed with Shun's proprietary VG-Max cutting core with 68 layers of stainless Damascus cladding for a strong, corrosion-resistant, stain-resistant, razor-sharp 16-degree edge that glides through food. The D-shaped, ebony-finished Pakkawood handle is durable, beautiful, comfortable for both left- and right-handed users, and doesn't harbor bacteria. In Japan, the blade is more than a tool – it's a tradition. Housed in Seki City, the heart of the Japanese cutlery industry, Shun Fine Cutlery is dedicated to maintaining this ancient tradition. We also leverage modern, premium materials and state-of-the-art technology to provide Shun quality to millions of professional chefs and avid home cooks throughout the world.

NOTES:
- this is a knife made specifically for right handers - sorry, lefties! (I think they might have a left handed?)
- this knife is made of exceptionally hard steel - it will crack or chip if you use it incorrectly.
- this is an incredibly sharp knife right out of the box - visit Shun's website and you will see they offer FREE lifetime sharpening service - you just cover shipping/processing. Oh, and to anyone who has a chipped knife, they can fix it for free, you just lose a bit more material in reshaping it. Pretty cool.
I can't say I truly knew exactly what I was buying 5 years ago - I was just replacing my trusty Victorinox chef's knife with something I just assumed was better. What I've learned over the last 5 years has made me a true believer in the quality of craftsmanship behind this beautiful knife. During the pandemic, I spent a whole lot of time in the kitchen preparing food for the family. I learned so many different cooking techniques and knife skills I never dreamt I'd have the time to acquire. I found that I truly LOVE cooking and don't mind spending hours preparing amazing meals at all. I find it relaxing and meditative. Having sharp knives is a big part of that.
Anyway, just got lost thinking of all the awesome stuff I've made since I first learned how to scramble eggs as a kid. Just, wow.
As for those reviews giving this knife one star? Well, dunno about the guy who chipped his knife "cutting a tomato", but that was hilarious. I have cut thousands of tomatoes, tons of other vegetables, meats of all sorts, and probably a million garlic cloves and onions... never had a chip and what a joy it has been!
I sharpen my own knives and this thing has always taken the longest between rounds out of all the others. For anyone whose Shun is rusting - wash and dry your knife immediately when you are done using it, especially if you're cutting acidic foods!
My favorite knife is now 5 years old and hasn't got a spot of rust on it, has never chipped, and never bent. I'm sure every once in a great while something will slip past QA, in which case, you ought to exchange it for a proper unit - you probably won't be disappointed. If you treat this knife with care and maintain it properly, it should last you a very long time.
The only thing I haven't tried it out for cutting through bones etc - thus far it has been limited to flesh and a few chicken joints.
Overall though - would recommend, I see this being my workhorse kitchen knife for years to come!
I would like to remind anyone and everyone that this knife is sharp. Tried telling her this as the knives that she’s been regularly using were pretty dull, but she nicked her finger anyway.
These have been getting used fairly regularly, hand cleaned as soon as possible, and dried with a clean towel. Haven’t had the need to sharpen it yet only hone, and they’re still very sharp.
As with kitchen knives in general if you hand wash and dry with clean towel, they’ll keep their edge well and not rust. NO DISHWASHER

De todos los cuchillos que he manejado este es sin duda el mejor.
If you don't want to read all my review: This is a decent knife. The best one I used so far. Be aware, you will need to learn how to sharp with waterstone if you want to keep the factory sharpeness.
I was looking for a complete set of 14 knives or so with the wood block. Most high quality brands were on sold during Black Friday and Christmas, so I decided to go with that. But fortunately, I realized before spending all that money do I really need all these knives ? So I decided to do a google search and I ended up with a lot of people saying how useless it was to buy the pre made set. First, because you will not use all of them and second, because if you look at the specs, only the chef knife, the utility knife and maybe the santoku knife is made of high quality steal. So you end up paying a lot of money for a few medium range knife and a lot of low range knife. And to add to that, for most of us, home chef, you will find that you will use either a chef knife or a santoku…not both. You either learn the rocking motion or the sliding motion…So no need to pay for both knives (like you do when you buy a set)
So I decided to go for the individual knife to fit all my need. First one on the list: Chef knife 8 inches or more. After a lot of research, I was not decided between the Japanese or German knife. I was impressed how the Japanese could cut with ease, but was worried about the hard process of sharpening the knife. When you do some research, you will find there is only one real way to sharp these high quality knives and this is Waterstone sharpening. Fortunately, you can find hundreds of thousands of videos on YouTube on how to do it. You also can find a decent stone for 50 or so here on amazon.
So I decided to go with this knife and I’m so happy with it. You can’t imagine how sharp that thing is until you try it. The only flaw of that, is that you will have to change all your other knife because you will just hate how badly they cut. I tried german knife as well, and they are very good, but they just can’t compare with this Shun knife.
The only little thing I could enjoy from a knife of this price is a protector. You know just a little basic thing to protect your blade when you store it in your kitchen drawer.
Shipping was fast as well.
In the end, I’m cutting pretty much everything with my chef knife. I really enjoy cutting in everything like it was butter. Best knife I used so far.
