Shun“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection. Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see. |
Handcrafted in JapanShun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world. |
Knife Steel is EssentialHeat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process. |
Quality and PerformanceShun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time. Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too. |

Shun Premier
The first thing that catches the eye about the beautiful Shun Premier series is its magnificent tsuchime (tsoo-CHEE-may) finish. This hammered finish combined with Premier's mirror blade polish and intricately layered Damascus, gives Shun Premier a look that is at once rustic and sophisticated.
But the real beauty of Premier is how it performs. Premier is designed to provide exceptionally agile handling. The lightweight, razor-sharp blades are quick and precise. The palm swell on the handle nestles into the hand to provide confident control - for both smaller and larger hands. The embossed endcap and brass ring provide both balance and beauty.
Pakkawood Handle
Shun Premier features a PakkaWood Handle that offers a comfortable grip. Walnut-colored PakkaWood is durable, and won't harbor bacteria. The embossed endcap adds beauty and balance.
The handle features a full composite tang that adds strength and balance.
16 Degree Cutting Edge
Like all Shun knives, the Premier line features a 16 degree cutting edge that is hand sharpened and razor sharp. The blade has a double-bevel, quick taper, and flat ground.
VG-MAX Cutting Core
Shun Premier features our VG-MAX steel, the newest of the VG line of "super steels". Available only from Shun, this extremely fine-grained steel has been enhanced to offer "maximum" performance, strength, corrosion resistance, and a sharp, long-lasting edge.
The hammered tsuchime finish helps release food food easily when cutting.

My only criticism of the knife is the handle is a little long. While holding it correctly in a "Pinch-Grip" fashion, there is quite a bit of wood remaining below my hand.

My only criticism of the knife is the handle is a little long. While holding it correctly in a "Pinch-Grip" fashion, there is quite a bit of wood remaining below my hand.
Okay, let's address the price tag upfront – it's not cheap, but it's totally justified. You can tell that this knife is all about craftsmanship and quality. It's not just a kitchen tool; it's a statement piece.
Now, the sharpness of the blade is something to behold. It's like a precision instrument. It effortlessly cuts through ingredients, whether it's those delicate, paper-thin slices for sashimi or precise julienne cuts on hearty veggies. Plus, it holds its edge impressively well; I've rarely had to sharpen it.
The handle is designed for comfort and security, fitting perfectly in your hand. That's a big plus when you're working with such a precise tool.
This Japanese chef's knife has seriously upped my cooking game. If you're a dedicated home cook or a pro chef, and you understand the value of top-quality cutlery, this knife is worth every penny. It's an investment in precision and performance that you won't regret. It's a true kitchen masterpiece!

For miyabi you need min 61 hardness to retain the edge. I have morimoto edition as well with 57 hardness and that requires sharpening every month. This koh series has beautiful handle and is most used knife. It retains edge upto an year. I also have black series that never requires sharpening but is quite sticky to foods and is terribly hard to sharpen. I am talking about 10 mts vs 2 hours.!!!
I consider Japanese knife as functional jewellery and have quite a collection. Once you use that then you can never go back to German knives. And once you use miyabi then you can feel that shun is comparatively blunt. That's why I try to re develop edge to 10 degree in shun knives as well. With 61 hardness it holds it well. Though I love miyabi because that knives have no sharp edges except for the cutting edge. Shun should consider doing that because, as I said, after miyabi it feels unrefined.
What I used 10 inch knife for? For the starter it is defacto knife for doing kurbani because it retains sharpness even after 50+ use compared to traditional ones that blunts out at mere 5. Plus the sharpness as as the god intended.
Ofcourse you can use it for vegetables as well. Or if you got the tip then for fulleying fish as well or for cutting softer meat pieces.
8 incher can do it all as well but consider reducing height by 3mm by redeveloping the edge. It's risky to do that because you can chip large piece and thus make the knife useless.
